Zesty Baked Lemon Chicken

6 chicken quarter legs
2 lemons / 1 cup of lemon juice
1 whole garlic (diced)
garlic salt (or just plain salt and garlic powder will do)
ground black pepper
chilli powder (optional)

rinse chicken with warm water if necessary. place in a large bowl and toss diced garlic in it. try to mix it with both hands (and just kinda let the garlic rub real good onto the chicken). add enough garlic salt and pepper (sorry, i don't really measure.. i just guesstimate what looks/smells about right). then, squeeze 2 whole lemons (or 1 cup of lemon juice if you have the bottled one).

if you want to add a little bit of pizazz, you can add chilli powder to your liking, or not. i don't always add chilli powder, but if i'm up for something something more flavorful.. i add just a tad bit of that and dried basil.

cover the bowl with cling wrap or foil. let it marinate in the fridge for at least 2 hours. i would suggest overnight so the flavor sips through but if you're in a hurry, 2 hours is enough.

when you're ready to bake: set the oven on 300° and pre-heat for atleast 15 minutes. line the chicken in the baking sheet; bake for 30 minutes on each side (or until you know it's cooked thru). then, you could either, bake it in high temperature like 450° for another 15-20 minutes (depending on how fast it's going to make it crisp) with the skin facing up OR broil it for 15 minutes for sure and it's ready.

serve with garlic paste or hummus and khobez (pita bread)
6-8 servings
